We're getting ready for our trip to Mississippi!
I'm going to need ideas for:
14 breakfast
13 lunch + 1 lunch on the go
13 dinner (maybe 14 if you count the first night that I'll be there)

Cooking will be tricky because I'll have to really count on a 4-qt crockpot (will have to buy & leave there: $20), 1 single burner (as a mini stove top)

COOKED ROAST IDEAS:
1) Use slices for sandwiches
2) Dice over salad
3) Diced in Tacos
4) Diced in Taco salad
5) Diced in Fajitas
6) Diced w/gravy over toast, biscuits, rice, or mashed potatoes
7) Diced in spagheti
8) Diced in Chili
9) Diced in Beef stew

Consumer Reports and Food:
 Consumer Reports says that there are 15 foods that parents should eat every week so that we can maintain OUR own energy and health.
1) 8 oz. glass of slim or low-fat milk
2) Bananas-great source of fiber, vitamin B6, and potassium
3) 8 oz orange juice
4) salad
5) peanut butter
6) sweet potatoes
7) salmon and fish
8) broccoli
9) whole-grain cereal
10) lean red meat
11) vegetable soup
12) yogurt
13) eggs
14) tomato sauce
15) beans

There you have it!  I'm going to definitely work on trying to incorporate these into my diet.  So many times, it's easy for us to just settle for 3 full size meals and have 2 snacks (these days, it's sadly been chips, bread, or some juicy w/another not so good snack).  We used to eat so well...what happened?  I really haven't been concentrating on my family's food.  There really is no love in it these days!  In fact...For the past 2-3 days, I've had my husband just buy lunch, and at dinner, we'd go out to eat.  Not only has it been a waste of money, but it's also not good for our health. 

After my SIL's wedding and the out of town guests leave so that I'm not as frazzled, I'll get back to concentrating on keeping my family healthy and well fed.

Recipe review for Wild Rice w/Chicken Leg Quarters

My family enjoyed this meal.  I can see myself making this fairly often...Today, I went to the market and found chicken leg quarters on sale for $0.79.  I've never purchased chicken leg quarters before and I don't know how much they usually cost but it looked like a big enough chunk of meat for less than the cost of Costco's chicken breast so I bought 3 packs.  I didn't know what to use them for so I went on Google and found this recipe.  Glad that I did~
Since one of the packs that I used had 3 pieces, instead of using the 4 pieces, I just used 3 legs but used the same amount of everything else (1 can of condensed soup, 1 pack of instant rice, etc.).  I did reduce the amount of liquid to just one cup (because a lot of other people recommended doing so). 
I did have to play with the cooking time though.  Initially, I baked the chicken at 350' for 45 minutes, then after adding the rice mixture, baked it again for close to an hour. 
Meal price breakdown:
chicken: $3.26
rice a roni: $1.00
broccoli: $0.50
canned soup: $0.56
sour cream: *approximately $0.60
Sour Dough Bread: $0.27
TOTAL:  $6.19
Served 3, + Leftover for 2
Each serving:  $1.24
Dinner tonight:  $3.72

I'm trying to balance being a good wife and a good mom.  It's really hard for me to balance these two roles...
Now that my son is two years old, I want him to introduce him to more things.  He's been ok with just doing the simple things with me at home...banging on the kitchen pots & bowls, looking through the cabinets, playing with his toy animals, balls, & trucks...and occasionally coloring with his crayons and playing stickers with me.  But I really wanted to help him grow more so these days, I've been taking him to the library.  I used to do that with him more frequently when his dad was on deployment but after he came back, I'm sad to say that I really haven't taken him that often to the library!  We used to go to the park pretty frequently too...but that too has dwindled down a lot. 
I'm now trying to make more of an effort to take my son to places where he can interact more with kids his age and participate in his age (as well as developmental stage) appropriate games and activities. 


*MUST WORK on coming up w/snacks & meals on the go.  Couple that I can think of:
-Granola Bars
-Cereal in Snack Cup
-Yogurt w/Granola on the side (or: rice crispies, sliced fruit, animal crackers)
-Juice
-VEGETABLE juice!
-Milk
-Sliced Fruit
-Jello cups w/fruit
-PB & Banana sandwich---w/milk
-cheese sticks
-Raisins
-carrot strips w/ranch (not  carrot coins because they are choking hazards)
crackers w/side of jelly
muffin
popcorn
oatmeal cookies
goldfish
animal crackers
honey roasted peanuts
hummus w/pita chips
mini bagel- (or dried and sliced)
cottage cheese & fruit jam
